I love meals where I can include rotisserie chicken into, one less step that I have to worry about. In this recipe I’ve used a lemon pepper rotisserie chicken that I purchased at Wal-Mart (these go for around $5 so for an already cooked and tasty chicken its perfect). My family could eat pizza every day of the week if it was up to them to chose dinner so we love to just make our own versions at home. This pizza is loaded with broccoli and garlic seasoned cauliflower and I buy the steam-fresh bags because I think they taste the best and it’s easy to prepare. Along with the vegetables I added bacon (hubby’s choice), the chicken, ranch dressing, and mozzarella cheese. The recipe can be made so many ways, for instance if you wanted to use buffalo chicken instead it would taste great and add even more vegetables/toppings of your liking.
Ingredients
Pizza Crust – We used Mama Mary’s you can purchase it at pretty much any grocery store
1 cup bacon pieces
2 cups mozzarella
2 bags of 10.8 oz Steam Fresh Broccoli
1 bag of Garlic Seasoned Cauliflower
Big bottle of ranch ( or for a healthier version use this Homemade Ranch dressing made with Greek Yogurt for less calories!)
Rotisserie Chicken ( we used Lemon Pepper flavored)
Olive Oil
Garlic Seasoning
First you’ll prepare your vegetables according to the package directions. Then shred your rotisserie chicken. Lightly brush a tablespoon of olive oil on the pizza crust and layer accordingly ranch dressing, vegetables, chicken and bacon, lightly season some Garlic Seasoning, and then another light layer of ranch dressing, topped off by the mozzarella cheese. Now depending on what pizza crust you go with, you may have different cooking times/tempetures but for the Mama Mary’s brand you will preheat to 450* and cook for 8 – 10 mins till the cheese is melted and crust is a light brown.
This pizza would be great if you were to substitute steak instead of chicken or try a buffalo chicken vegetable pizza. The possibilities are endless. What are some of your favorite pizza combinations?
