I thought I would start off my first post with one of my favorite recipes. My family loves food and in this house with two children two and under I’m always looking for meals that are easy and fast to prepare but taste great! My husband has me make this Ranch Parmesan Chicken at least once a week and there are no leftovers every time, even with a picky two year old! In our house if our two year old will eat it, it’s a winner. The chicken marinates overnight in ranch dressing which leaves it really moist and with tons of flavor. It’s even great in a salad or as chicken fingers, which my toddler prefers.
Ingredients
- 5 boneless chicken breasts
- 1 cup of dry breadcrumbs (panko works best)
- 1/3 cup parmesan cheese
- 1 teaspoon seasoning salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 2 cups of ranch dressing ( we use light ranch for a lighter option)
- 1/4 cup melted butter
Pound chicken breasts to even and marinate overnight in ranch dressing. Preheat oven to 400 degrees and set oven rack to lowest position. Combine breadcrumbs, Parmesan cheese, seasoning salt, black pepper, and garlic powder in a bowl. Take the marinated ranch chicken and coat in the breadcrumb mixture. Line a baking sheet with aluminum foil and place the chicken in a single layer. Drizzle melted butter over the chicken. Finally bake for 30 – 35 minutes.
