I love everything about fall from the weather, the clothes, and most of all the food! For me, fall is all about comfort food but with my families busy schedule and after school activities it leaves me with little time to spend prepping and cooking dinner for a family of four. So for when those quick nights hit I like to have a few quick, easy, and healthy recipes that I can always count on to have ready to go.
The best part of these simple recipes that I’m going to share is that they’re made with hidden vegetables. Planning and preparing dinner is stressful enough, with these meals you don’t have to worry about the kids not eating their vegetables. These no fuss meals are made with their favorite foods like pizza, muffins, and pasta and sneak in extra nutrition at the same time.
One of my favorite go-to meals is this quick and delicious Two Timin’ Pasta Bake where we use the NEW RAGÚ® Simply Chunky Marinara Pasta Sauce and cauliflower and lentil penne pasta. The new marinara sauce is made with 100% olive oil and no added sugar, giving you delicious healthy recipes during the busy weeks that you can feel good about. With each bite you’ll taste the delicious plump tomatoes, onions, garlic, and spices that your family will love!
You can also use NEW RAGÚ® Simply Chunky Marinara Pasta Sauce for these other delicious recipes:

We make this Two Timin’ Pasta Bake frequently because it’s so simple and because it’s made with NEW RAGÚ® Simply Chunky Marinara Pasta Sauce and Cauliflower and Lentil pasta it’s such a healthy option for our family!
How To Make Two Timin’ Pasta
Ingredients:
1 box of Cauliflower and Lentil Penne Pasta
1 15oz Jar Alfredo Sauce
1 24oz Jar New RAGÚ® Simply Chunky Marinara Pasta Sauce
2 cups shredded Mozzarella Cheese
1 cup shredded Parmesan Cheese
Directions:
- Cook pasta according to directions and drain.
- Mix sauces together in a large bowl.
- Add the mozzarella cheese and stir to combine.
- Then toss in the cooked penne and toss the sauce to coat.
- Pour pasta into a 9×13 baking dish and cook at *350 for 20 minutes or until bubbly.
- Remove from the oven and sprinkle with shredded parmesan and bake for another 5 minutes.
The cauliflower and lentil penne pasta we use in this recipe is by Cali’flour Foods, I prefer to use this in replace of our regular pasta so we can sneak in those hidden veggies. The Cauliflower and Lentil Penne pasta contains only cauliflower and yellow lentil, this high protein pasta is grain and gluten free as well as low glycemic.
Another meal that I like to give a healthier twist to is a kid favorite in our home…pizza! We love switching the traditional pizza crust with a cauliflower pizza crust. We’ve made it homemade and tried a few frozen varieties but we’ve found the best crust was this low carb Cauliflower Pizza Crust by Cali’flour Foods.
This pizza crust is made with 4 simple ingredients, fresh cauliflower, mozzarella cheese, eggs, and seasoning. The crust is gluten free, grain free, low carb with 6 grams for the entire crust and only 180 calories(for the entire crust).
The crust is very simple to make too. You’ll place your frozen pizza crust on a pizza screen and then cook for 10-12 minutes. Let it cool completely and then top with your favorite toppings.
My kids love just a traditional pepperoni pizza so we like to keep it simple. After you’ve placed your toppings on your crust you’ll warm the pizza in a broiler for 1-2 minutes.
This is by far our favorite cauliflower pizza crust and it’s kid-approved in our house!

Another product that I love and is perfect to have on for those hectic school mornings are Garden Lites. My kids are HUGE fans of these little cakes and so is mom because they’re super quick to make and packed with veggies!
To make them, you simply heat them up in the microwave for 30 seconds in the wrapper or you can just defrost them and eat at room temperature, which is perfect for packing in kids’ lunchboxes. The kids can eat them in the mornings, after school snack, or even dessert. Garden Lites Blueberry Oat Muffin first ingredient is zucchini and it tastes just like a fresh blueberry muffin! These bites are allergy-friendly, gluten, dairy, and nut free as well.
We have also tried the Garden Lites Superfood Veggie Cakes which is packed with superfood veggies like kale and cauliflower and under 100 calories. These delicious cakes work great paired as an alternative to your veggie dinner side dish.
Visit the store locator to find where you can buy these delicious cakes locally and to print a $1.00 off coupon available for in-store purchases. If you choose to order online you can use the code BABBLE20 for 20% off your order from the Garden Lites online store.
The Garden Lites Blueberry Oats muffins pair perfect with my morning coffee too! Breakfast is one of the most important meals of the day and I always have to pair mine with the perfect cup of coffee. What I use to make my perfect morning cup of coffee is an 11 oz. bag of Red Diamond Classic Blend Ground Coffee and a splash of my favorite creamer (currently pumpkin spice).
Try Red Diamond Medium Roast Classic Blend and enjoy a nice cup of Arabica coffee. Red Diamond coffee beans are grown at only a high altitude, hand picked, sun-dried, and roasted in small batches. Red Diamond offers the perfect cup of coffee, they never skimp or cut corners with their coffee tea or production.
Use the store locator to find Red Diamond coffee in store or shop online at RedDiamond.com with the code coffee2018 to save 20% off your online order! The promo code is good until midnight central time on 12/31/18 and is 1 use per customer, no minimum purchase.
