INGREDIENTS
Unicorn sprinkle mix:
1 pouch of Light green, Light Blue, Hot Pink, Yellow, Purple, and Orange Nonpareil’s and sprinkle Jimmies (bought from Michaels craft stores)
Directions:
Combine all 12 pouches into a bowl and mix until completely combined
Cake:
1 box Funfetti cake mix, ingredients as needed for the cake mix
3 tbsp of unicorn sprinkles
Cheesecake:
3 8oz. cream cheese, softened
1 cup sugar
3 large eggs
1/4 cup sour cream
2 tsp. vanilla extract
purple blue and pink gel food coloring
1 small ice cream scoop
9inch springform pan fitted with a parchment paper on the bottom
1 can of pam baking spray
icing spatula
Whipped cream:
Heavy whipping cream
Powder sugar
purple, pink and blue gel food coloring
3 disposable piping bags
Unicorn sprinkles
DIRECTIONS
Preheat oven to 350°
Using a 9” springform pan, fit a sheet of parchment paper onto the bottom and coat it with the pam spray.
Set to the side
Cake:
Make the Funfetti cake mix according to package instructions
Mix in the 3 tbsp of unicorn sprinkles
Pour the batter about 1/2 way into the springform pan
Bake 23 to 25 minutes.
Or until a toothpick inserted into the middle of the cake comes out clean.
Remove from the oven and let the cake cool for 10 minutes.
Cheesecake mixture:
In a large bowl add cream cheese and sugar and mix with a hand mixer until well combined.
Add eggs, 1 at a time and beat until combined before adding the next.
Now stir in the sour cream and vanilla.
Mix until combined.
Split the cheesecake into 3 bowls and add a few drops of the colors into their own bowls.
Mix until combined
Using the ice cream scooper, scoop each color onto the top of the cake, alternating between each colors
Use the icing spatula to smooth out the cheesecake
Bake 1 hour to 1 hour 10 minutes.
Remove pan from oven.
Let cool 1 hour on a wire rack, then refrigerate until totally chilled, at least 4 hours and up to overnight.
Prepare the whipped topping.
Ingredients
Whipped cream:
Heavy whipping cream
Powder sugar
purple, pink and blue gel food coloring
3 disposable piping bags
1 angled spatula
Unicorn sprinkles
Directions
Using a standing mixer, combine the heavy whipping cream, vanilla and powder sugar
Mix on medium speed until stiff peaks form
Decorating:
Split the whipped cream into 3 bowls and add a color to each bowl
Mix the whipped cream until your colors are completely mixed.
Scoop each colored whipped cream into their own piping bag
Cut the tips off the piping bag
Using only one color at a time, alternating between the 3 colors, pipe a row of dots vertical
Using the spatula, spread your whipped cream to create the petal look
Repeat steps until the edge of the cheesecake is completely covered.
Pipe dots of the pink whipped cream on top of the cheesecake and sprinkle with some unicorn sprinkles
Place the cheesecake back to refrigerate for 30 minutes before serving.
